If you have never read here before, I’ll let you in on something. I love eating salads. It could be because I can create a great tasting salad out of almost anything. Or it could be because I love all of the different textures combined in one fork full of green goodness.
I was so excited when I got to try Litehouse dressings and create a recipe using them! My mind instantly went to salads, the tough part was choosing which salad recipe to share.
One of my favorite salads is a salad from a local chain restaurant called Portillo’s in the Chicagoland area. They have a a chicken chopped salad the I absolutely love. I made a few changes to the salad recipe to add my own spin. After I made the salad me and Honeybee had fun eating it (recipe below).
