Since I’ve started homeschooling making easy healthy lunches has been jam! I decided to make this sushi bowl a main staple in our lunch recipes because it’s quick and healthy. I came up with the idea for this recipe after watching a Youtuber create their version of a sushi bowl. The only difference is, I used an ingredient that takes this sushi bowl from average to TASTY!
Simple Veggie Sushi Bowl
Lately, I’ve been making an effort to eat less meat. I don’t plan on going plant-based or vegan. I just found that eating fewer meat cuts back on our grocery bill, and it forces us to eat more vegetables. This sushi bowl can be jammed packed with as many vegetables as you would like. Depending on my mood, I may add sweet potatoes, kale, or roasted chickpeas. The possibilities are endless when it comes to what you add to your bowl.
I also love that I can get the taste of sushi, without the sushi prices. Adding wasabi to this meal would make it taste even better! I also love the fact that 2 out of 3 of my kids love eating this. I consider that a win!
Cook Jasmine per directions. While the jasmine rice is cooking, you can prep whatever vegetables you are adding (chop cucumber and avocado).
Once the rice is done, let it cool for about 10 minutes. When cool, pour a little soy sauce and drizzle a little sesame oil to fit your taste. Place vegetables on top and sprinkle with the rice seasoning.
It’s that simple.
I usually find the Rice Seasoning in the Asian aisle at Giant Eagle. I tried to find it at Walmart but they didn’t have it. The best thing to do is to order it from Amazon because you don’t want to run out of this stuff! Trust me!
