I have a confession.  This wasn’t what I had planned for my original recipe.  I really wanted to make coconut butter, because I’ve tried it and I love it!  I thought it would be a simple recreation, but it was disappointing when my version didn’t even turn out close to what I had in mind.

I blended and blended my coconut flakes, and it didn’t turn into a smooth consistency like people said it would. My blender blade got stuck several times during the entire process.  Which led me to Googling “How to get  Nutribullet blade unstuck”.  Luckily, I found a very helpful tutorial that worked perfectly.

After getting my blade unstuck for the millionth time. I decided to give up on my dreams of creating coconut butter.  However, I didn’t want my lovely mixture to go to waste.  So I started brainstorming on ways I can use it.  Since the mixture was sticky I decided to make Chocolate Coconut Pecan Energy balls.

There was no way I could mess that up.  As it turns out. I was right.  Besides the blending, this recipe is very simple.  If you notice simple and delicious recipes is a theme on my blog.  I’m a mom of three, so I don’t have time for complicated foods (unless it is a special occasion).

After I made the energy balls, my 6-year-old ate two of them.  But I had to stop her at the third because it gave her more than enough energy.  I’m talking, bouncing off the walls type energy.  I ate one as well, it gave me enough energy to finish all of my laundry that day, plus complete a few blogging projects.

What I also love about these chocolate coconut pecan energy balls is that they satisfy my sweet tooth.  They are on the healthier side of sweet treats, which I really appreciate it.  If you try these chocolate coconut pecan energy balls I hope you enjoy them.

Chocolate Coconut Pecan Energy Balls

1 1/2 of Shredded Coconut (I used sweetened, but feel free to use unsweetened)

1 Tbsp of Pecans

1 Tablespoon of Cocoa Powder

1/2 Tablespoon of Chia Seeds (optional)

Take coconut and cocoa powder and blend it in the blender.  The texture will turn sandy.  You also may have to scrap the sides of your blender down a few times during this process. The consistency will slowly change to clumpy.  You should be able to squeeze it and make a ball.

Once you get that consistency dump mixture in a bowl and add chia seeds and crushed pecans. Mix them together, and roll them into balls.

Refrigerate to help set, and that’s it!  You have your chocolate coconut pecan energy balls.

  1. That sometimes happen. What you plan didn’t turn out the way you wanted, but you’re able to turn a dim situation into a bright one. I’m allergic to nuts so I will have to make it without them.
